In Dubai salons the most painful loss is not the master but the clients who follow them. Contracts help a little. Systems help a lot. Here is the honest picture.

In practice, the relationship belongs to whoever the client talks to. If the client books through the master's personal WhatsApp and follows the master's Instagram, the salon owns a list of names and the master owns the loyalty.
The current UAE labour law allows a non-compete clause in some cases, mainly when the job gives access to clients or business secrets. It must be limited in time (the law sets a maximum of two years after the contract ends), in place and in type of work. Whether a specific clause is enforced depends on the case, the wording and the facts, and in practice enforcement against an individual master is limited, slow and costly.

Most masters leave for money, schedule or respect, not because a competitor exists. A written commission plan, a visible career ladder and a manager who handles conflicts fairly keep more clients than any clause. When someone does leave, call their regular clients from the salon within days, offer a consultation with another master and keep the tone warm.
