Restaurant managers for independent restaurants, fine dining, beach clubs, hotel outlets and cafe groups in Dubai. The restaurant manager owns one venue end to end: the floor team and the rota, the guest experience and online reviews, the link between kitchen and floor and the numbers behind every night (covers, average spend, labour and beverage cost). TLNT has 400+ clients, and for this role we assess candidates on a real service problem and on a week of numbers, not only on the famous brands in the CV.
Hire a restaurant managerLooking for a job?A restaurant manager who runs a full Friday night calmly, knows the labour cost of every shift and turns an unhappy guest into a regular.
Venue names on a CV say little about what the person actually ran. The four checks below show how the candidate leads a service, reads numbers and handles people.
Typical hiring mistake: promoting the best waiter, or hiring a candidate from a famous brand, without checking that they ever owned a rota, a budget or a P&L line. How it differs from neighbouring roles: a general manager runs several venues or the whole company and talks strategy with the owners; an assistant or floor manager runs the service but not the numbers; the restaurant manager owns one venue completely, floor and numbers. In a hotel the outlet manager works within the hotel's standards and reports to the F&B team; in an independent restaurant the manager usually deals with the owner directly and needs more commercial initiative.

Three things: how they run a difficult service (a late large table, a slow kitchen, an unhappy regular), whether they can read a weekly sales and rota sheet and bring labour cost down, and how they train and keep a team. Then ask the previous owner or operations manager what changed in reviews, costs and staff turnover under the candidate.
