How it differs from a host or hostess: the host runs the door, the reservations, the seating and the flow of the whole room; the waiter serves the tables of one section from order to bill. In a small cafe one person may do both. Typical hiring mistake: hiring for appearance and languages without a test table, then finding out after a week that the person cannot carry three plates or still does not know the menu. For fine dining, test wine service and plate presentation separately.

Set up a test table with your own team playing guests: a short set menu, one complaint and the bill. Then ask allergen and pairing questions from your menu. This shows service technique and attitude within an hour and does not involve real guests. Finish with a reference call to the previous manager.
